Pomegranate-citrus Turkey Recipe

Ingredients
  • 1/4 c softened butter .
  • 2 tsps cracked black pepper, divided .
  • 1 orange, juice & zest of .
  • 1/3 c honey .
  • 3/4 c pomegranate juice .
  • 2 tbsps sliced fresh parsley, divided .
  • 2 garlic cloves, peeled & minced .
  • 1 (12 lb) whole turkey, cleaned .
  • 1 tbsp sliced fresh rosemary, divided

Directions
  • Step #1 Heat oven to 425F degrees.
  • Step #2 In a bowl mix butter, 1 Tbs.
  • Step #3 parsley, garlic, 2 tsps roesmary, 1 Tbs.
  • Step #4 orange zest, 1/4 tsps pepper & 1/2 tsps salt.
  • Step #5 Rub mixture under turkey skin.
  • Step #6 Sprinkle top remaining parsley, rosemary, & pepper & 1 tsps salt over turkey.
  • Step #7 Place turkey on rack in a roasting pan.
  • Step #8 Roast at 425F degrees for 15 mins.
  • Step #9 Reduce heat to 350 degrees, roat 2 hrs more.
  • Step #10 Meanwhile, in a saucepan, bring pomegranate juice, honey & 1/3 c orange juice to a boil.
  • Step #11 Reduce heat & let simmer 4 mins, or until slightly thickened.
  • Step #12 At the end of the 2 hrs, brush mixture on turkey.
  • Step #13 Roast turkey 45 mins more, reads 170 degrees, or until a meat thermometer inserted in thigh, not touching bone, basting every once in awhile.
  • Step #14 Let sit 15 mins before slicing.
  • Step #15 Garnish with herbs & orange slices, if desired.
