Creamy Blue Cheese Polenta Recipe

Ingredients
  • 4 c milk .
  • 2 c polenta .
  • 4 oz blue cheese .
  • 4 c water .
  • 1/4 c butter .
  • salt & pepper .
  • 1/2 c sour cream

Directions
  • Step #1 Heat milk & water in heavy bottomed sauce pan & bring to simmer over med-heat/flame.
  • Step #2 be careful not to boil.
  • Step #3 Whisk in polenta in slow stream.
  • Step #4 Bring to a boil, then turn heat to low.
  • Step #5 Continue to stir, adding more water if it gets too thick.
  • Step #6 Stir every few mins & continue cooking for 25 to 30 mins, adding water when needed.
  • Step #7 Remove from heat & add sour cream, butter & blue cheese.
  • Step #8 Spice up with salt & pepper to taste.
