Stormy Day Breakfast Bread Pudding Recipe

Ingredients
  • 2 eggs, beaten .
  • 4 c dry bread cubes .
  • 2 c skim milk .
  • 1/3 c brown sugar, packed .
  • 1/4 tsp salt .
  • 1/2 c oatmeal .
  • Topping .
  • 16 oz canned pears, drained & sliced .
  • 2 tbsps butter, melted .
  • ground cinnamon .
  • 1/4 c brown sugar, packed .
  • 3/4 tsp vanilla

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Spray an 8" x 8" glass baking dish with cooking spray.
  • Step #3 In a large bowl, brown sugar, eggs, mix milk, vanilla & salt.
  • Step #4 Blend well.
  • Step #5 Add bread cubes & mix well.
  • Step #6 Pour mixture into prepared pan.
  • Step #7 Arrange place pears over bread & sprinkle entire top this with cinnamon.
  • Step #8 Mix topping ingredients of oatmeal, brown sugar & melted butter together.
  • Step #9 Sprinkle top over bread & pears.
  • Step #10 Bake for 50-60 mins or until knife inserted in center comes out clean.
  • Step #11 Let sit for 5 mins before cutting.
  • Step #12 Serve warm.
