Passion Fruit Mousse With Macadamia Nut Toffee Recipe

Ingredients
  • 1 1/2 c sugar .
  • 3 c heavy cream .
  • For the passionfruit mousse .
  • 2 c macadamia nuts, toasted & sliced .
  • 1 1/4 c sugar .
  • For the MacNut toffee .
  • 1/2 c water .
  • 2 tsps gelatin powder .
  • 1 3/4 c passion fruit puree .
  • 3/4 c orange juice (NO PULP) .
  • 4 oz unsalted butter .
  • 1/4 c rum .
  • 1/4 c honey

Directions
  • Step #1 First prepare the mousse, as you will need to chill it for at least an hr before serving.
  • Step #2 For the mousse:.
  • Step #3 In a saucepan mix passionfruit puree, orange juice & gelatin.
  • Step #4 Heat through until gelatin has been dissolved.
  • Step #5 Remove from the heat & place this in a bowl over & ice bath stirring constantly until the mixture starts to thicken.
  • Step #6 While the mixture is cooling whip the heavy cream & sugar until stiff peaks form.
  • Step #7 When the passionfruit has thickened add it to the whipped cream & mix throughly to mix.
  • Step #8 Chill for at least an hr before serving.
  • Step #9 For the mac nut toffee:.
  • Step #10 In a heavy sauce pot mix all ingredients except the nuts.
  • Step #11 Using a candy thermometer cook this mixture to 220 degrees.
  • Step #12 Then add mac nuts & continue cooking until it reaches 300F degrees & as soon as possible remove this from the heat.
  • Step #13 Pour on to a silpat lined half sheet pan.
  • Step #14 spread out evenly & allow this to cool.
  • Step #15 When cool rough chop the toffee into small pieces.
  • Step #16 The toffee can be stored in an airtight container for 4-5 days.
  • Step #17 Before serving, lightly fold pieces of the macadamia toffee into the passionfruit mousse.
