Oven - Fried Chicken Legs Recipe

Ingredients
  • 1 tbsp cornmeal .
  • 1/4 tsp white pepper .
  • 1/4 c crushed cornflake cereal .
  • 1/4 tsp black pepper .
  • 1 egg white, beaten .
  • 1/4 tsp garlic powder .
  • 2 tbsps nonfat milk .
  • 2 skinless chicken legs (drumstick plus thigh)

Directions
  • Step #1 Heat oven to 375*F.
  • Step #2 In a small c or bowl, mix egg white & milk.
  • Step #3 Combine cereal, cornmeal, & seasonings in a small zippered plastic bag.
  • Step #4 Dip chicken legs into egg white & milk, then drop into plastic bag & shake to coat.
  • Step #5 Bake chicken legs in nonstick baking dish for 25 mins.
  • Step #6 Turn & bake an extra 7 to 10 mins or until done.
  • Step #7 For an extra-crispy version, use cracker crumbs instead of cereal.
  • Step #8 This coating is great on fish, too.
