Crock Pot Chicken Tortilla Soup Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 7 corn tortillas .
  • 1 lb cooked chicken, shredded .
  • 10 oz red enchilada sauce .
  • 1 tsp salt .
  • 1 tsp cumin .
  • 4 oz green chili peppers, sliced .
  • 1 medium onion, sliced .
  • 1 bay leaf .
  • 1 tbsp cilantro, sliced .
  • 1/4 tsp pepper .
  • 14 1/2 oz chicken broth .
  • 15 oz crushed tomatoes .
  • 1 tsp chili powder .
  • 2 c water .
  • 10 oz frozen corn

Directions
  • Step #1 Place chicken, tomatoes, green chiles, onion, enchilada sauce, & garlic into crock pot.
  • Step #2 Add water, pepper, salt, cumin, chili powder, chicken broth, & bay leaf.
  • Step #3 Stir in corn & cilantro.
  • Step #4 Cover up, & cook on low for 6-8 hrs or on high for 3-4 hrs.
  • Step #5 Preheat oven to 400°.
  • Step #6 Cut tortillas into strips, then spread on a baking sheet.
  • Step #7 Bake until crisp, about 10-15 mins.
  • Step #8 To serve, sprinkle tortilla strips over soup.
