3 large sliced tomatoes or 1 (28 oz) can sliced tomatoes .
1 large sliced onion .
3 tsps salt .
2 c water .
1 tsp black pepper .
1-1 1/2 lb lamb (stew meat size) .
6 sliced garlic cloves .
2 lbs fresh okra or frozen okra .
1/2 tsp allspice .
1/2 c sliced fresh cilantro (optional) or 1 tsp coriander (optional) .
1/4 c olive oil or vegetable oil
Directions
Step #1 Wash okra & trim off stems, & dry.
Step #2 Sprinkle top okra with oil & place under broiler until lightly browned or fry in vegetable oil until lightly browned (do not use same oil for browning meat).
Step #3 Saute sliced onions,lamb meat,sliced garlic,salt,and spices in olive oil(stirring occassionly)until meat is lightly browned.
Step #4 Add water & stir, bring to boil & then cover & cook on low heat until meat is tender.
Step #5 Add browned okra,sliced tomatoes or (28 oz.
Step #6 can sliced tomatoes) & ½ c fresh cilantro or 1 tsp coriander (optional).
Step #7 Mix well, cover & let simmer until okra is tender.
