Nutty And Nice Crunchy Caramel Popcorn Recipe

Ingredients
  • 1/2 c unblanched whole almonds .
  • 1/2 c pecan halves .
  • 1/2 c cashews .
  • 1/4 tsp baking soda .
  • 1/2 c macadamia nuts .
  • 1/4 tsp salt .
  • 1/3 c corn syrup .
  • 1/3 c butter .
  • 2/3 c granulated sugar .
  • 1 tbsp minced gingerroot .
  • 6 c popped corn

Directions
  • Step #1 Preheat oven to 250ºF.
  • Step #2 Combine popcorn & nuts in large bowl.
  • Step #3 Set aside.
  • Step #4 Melt butter in medium saucepan over med-heat/flame.
  • Step #5 Stir in sugar, corn syrup & salt.
  • Step #6 Bring to a boil, stirring constantly then boil carefully without stirring for 5 mins.
  • Step #7 Remove from heat & stir in the ginger root & baking soda.
  • Step #8 Pour over popcorn mixture.
  • Step #9 Toss to coat evenly & turn onto a large roast pan or baking sheet.
  • Step #10 Bake in centre of preheated oven, stirring every once in awhile, for 35 to 40 mins or until crisp & caramel coloured.
  • Step #11 Turn out onto waxed paper-lined tray.
  • Step #12 Cool completely & break into pieces.
  • Step #13 Store in tightly covered container.
