Step #1 Preheat oven to 250ºF.
Step #2 Combine popcorn & nuts in large bowl.
Step #3 Set aside.
Step #4 Melt butter in medium saucepan over med-heat/flame.
Step #5 Stir in sugar, corn syrup & salt.
Step #6 Bring to a boil, stirring constantly then boil carefully without stirring for 5 mins.
Step #7 Remove from heat & stir in the ginger root & baking soda.
Step #8 Pour over popcorn mixture.
Step #9 Toss to coat evenly & turn onto a large roast pan or baking sheet.
Step #10 Bake in centre of preheated oven, stirring every once in awhile, for 35 to 40 mins or until crisp & caramel coloured.
Step #11 Turn out onto waxed paper-lined tray.
Step #12 Cool completely & break into pieces.
Step #13 Store in tightly covered container.
