Artichoke Spinach Hummus Recipe

Ingredients
  • 1/4 tsp vinegar .
  • 3 tbsps tahini .
  • 2 tbsps marinated artichoke hearts .
  • 3 tbsps water .
  • 1 (15 oz) can garbanzo beans, drained (chick-peas) .
  • 1 tbsp lemon juice .
  • 2 tbsps extra virgin olive oil .
  • 1 garlic clove, large, minced .
  • 2 tbsps frozen spinach, sliced, thawed & drained well .
  • 1/2 tsp salt (or sea salt to taste)

Directions
  • Step #1 Mix all ingredients except for spinach in food processor/blender or mixer until smooth.
  • Step #2 Stir finely sliced spinich into mixture.
  • Step #3 This will thicken after refrigeration, & is good for at least 2 weeks in the refrigerator (I've never had any last beyond then!).
  • Step #4 I serve this with reduced-fat Triscuits for a high fiber lunch.
