Mrs G's Pork Chops With Berry Sauce - Pressure Cooker Recipe

Ingredients
  • 1/3 c white wine vinegar (get creative & substitue your favorite fruit vinegar!) .
  • 2 tbsps light brown sugar .
  • 1/4 c lingonberry preserves or black currant jelly .
  • 4 pork loin chops, about 1 inch thick .
  • fresh ground pepper, to taste .
  • 1/4 c dried sweetened cranberries or dried cherries (or other dried fruit that is sweet & a bit tart) .
  • salt, to taste .
  • 1/4 tsp salt, plus more .
  • 1 1/2 tbsps Dijon mustard .
  • 1/8 tsp fresh ground pepper, plus more .
  • 1 tbsp vegetable oil

Directions
  • Step #1 Preheat the oven to 200 degrees (for keeping the chops warm at the end).
  • Step #2 In a smal bowl, soak the dried cranberries in warm water to cover until plumped, about 10 mins.
  • Step #3 Drain.
  • Step #4 In you pressure cooker, heat the oil over medium-high heat.
  • Step #5 Lightly season the chops with the salt & pepper.
  • Step #6 Place the chope in the PC & brown on both sides, about 3 mins, & transfer them to a plate.
  • Step #7 Meanwhile, in a small bowl, mix the preserves & mustard.
  • Step #8 Slather each pork chop with the preserve/mustard mixture & place this in the PC.
  • Step #9 Lock the lid in place.
  • Step #10 Bring to high pressure (15 lbs).
  • Step #11 Once PC has reached high pressure, let cook just around 30 SECONDS & remove this from heat.
  • Step #12 Use natural release.
  • Step #13 Do NOT quick release the pressure, it may toughen the meat.
  • Step #14 Open the lid with normal caution.
  • Step #15 Transfer the chops to a platter, cover loosely with foil wrap & keep warm in the oven while making the sauce.
  • Step #16 Using a wooden spoon, stir the vinegar & brown sugar into the PC, scaping up any browned bits from the bottom & sides of the pan.
  • Step #17 Cook, until the sauce is thickened & reduced by around 1/2 (to taste), uncoverd, about 3 - 5 mins.
  • Step #18 Add the dried/soaked cranberries to sauce.
  • Step #19 Pour any juices from the chops into the sauce & boil for a few seconds.
  • Step #20 Spice up with extra salt & pepper.
  • Step #21 Pour the sauce over the pork chops & serve as soon as possible.
