Curried Shrimp With Cucumber Vinaigrette Recipe

Ingredients
  • 1 tbsp sesame oil .
  • 1 cucumber, cut into sticks, as an accompaniment .
  • pepper .
  • 1/2 tbsp curry powder .
  • salt .
  • 1/4 c seasoned rice vinegar .
  • 1 English cucumber, halved lengthwise, seeded & sliced .
  • 1 lb large shrimp, about 20-24, shelled & deveined .
  • 1-2 tbsp vegetable oil

Directions
  • Step #1 Puree the English cucumber with vinegar in a mixer until smooth.
  • Step #2 Add sesame oil & mix until emulsified.
  • Step #3 Spice up with salt & pepper.
  • Step #4 Pat shrimp dry & sprinkle with curry powder & salt & pepper to taste.
  • Step #5 Heat 1 tbsps vegetable oil in a 12" nonstick skillet over moderately high heat until hot but not smoking.
  • Step #6 saute shrimp in 2 batches, (if necessary, turning them until golden brown & just cooked through, 2-3 mins, add more oil to the skillet for the second batch.
  • Step #7 ).
  • Step #8 Transfer shrimp to a plate to cool.
  • Step #9 Serve the shrimp at about room temp with vinaigrette & sliced cucumber sticks for dipping.
