Very Berry Blintzes Recipe

Ingredients
  • 1/4 c strawberries, sliced .
  • 2 oz cream cheese .
  • 1/2 c blueberries .
  • 1/2 c nonfat milk .
  • 1/2 tsp vanilla extract .
  • 2 egg whites .
  • 1 tbsp sugar .
  • 1 dash salt .
  • 1/2 tbsp butter, melted .
  • 2 1/2 tsps toasted wheat germ, divided .
  • 1/4 c flour .
  • 1/4 c raspberries .
  • 1/2 c sour cream, divided .
  • 1/2 tbsp sugar .
  • 1/2 c part-skim ricotta cheese

Directions
  • Step #1 In a bowl, whisk egg whites, milk, sugar & salt.
  • Step #2 Add flour; beat until smooth.
  • Step #3 Let stand 30 mins.
  • Step #4 Heat an 8-inch skillet coated with nonstick spray over med-heat/flame.
  • Step #5 For each blintz, pour 1/4 c batter into center of skillet; turn pan to cover bottom.
  • Step #6 Cook until light brown; turn & brown other side.
  • Step #7 Cool on a wire rack.
  • Step #8 When completely cool, stack with paper towels between.
  • Step #9 For filling, sugar, beat ricotta, cream cheese, 1/4 c sour cream, 1/2 TBS wheat germ & vanilla until well mixd.
  • Step #10 Spoon 1/4 c filling onto each blintz, fold ends & sides over filling.
  • Step #11 Arrange blintzes, seam side down in a 13x9x2-inch baking dish; brush with melted butter.
  • Step #12 Cover up & bake this at 350 degrees until heated through, 10-15 mins.
  • Step #13 Top each blintz with berries & a dollup of sour cream.
  • Step #14 Sprinkle top with wheat germ.
