Ingredients
salt & pepper .
4 tbsps butter or margarine .
1 c raw sliced potatoes .
1/4 tsp ground cloves .
1 c sliced mushrooms .
1/2 c irish oatmeal .
4 c chicken stock or bouillon .
1/2 c sliced onions .
1 lb spinach .
heavy cream
Directions
Step #1 Melt butter over a low heat.
Step #2 Add sliced potatoes, sliced onions & mushrooms.
Step #3 Cover up skillet & sauté vegetables for 8 to 10 mins until soft & translucent.
Step #4 Wash spinach, pick of tough stems & chop finely.
Step #5 Add potatoes, onions, mushrooms & spinach to stock.
Step #6 Spice up with salt & pepper & 1/4 tsp ground cloves.
Step #7 Add 1/2 c Irish oatmeal.
Step #8 Simmer for 20 mins.
Step #9 Serve with heavy cream floating on top.
Step #10 Serves 4-6.
