Irish Saint Patrick’s Soup Recipe

Ingredients
  • salt & pepper .
  • 4 tbsps butter or margarine .
  • 1 c raw sliced potatoes .
  • 1/4 tsp ground cloves .
  • 1 c sliced mushrooms .
  • 1/2 c irish oatmeal .
  • 4 c chicken stock or bouillon .
  • 1/2 c sliced onions .
  • 1 lb spinach .
  • heavy cream

Directions
  • Step #1 Melt butter over a low heat.
  • Step #2 Add sliced potatoes, sliced onions & mushrooms.
  • Step #3 Cover up skillet & sauté vegetables for 8 to 10 mins until soft & translucent.
  • Step #4 Wash spinach, pick of tough stems & chop finely.
  • Step #5 Add potatoes, onions, mushrooms & spinach to stock.
  • Step #6 Spice up with salt & pepper & 1/4 tsp ground cloves.
  • Step #7 Add 1/2 c Irish oatmeal.
  • Step #8 Simmer for 20 mins.
  • Step #9 Serve with heavy cream floating on top.
  • Step #10 Serves 4-6.
