Scalloped Potatoes Recipe

Ingredients
  • 4 oz grated cheddar cheese, shredded (1 c) .
  • 1 c low sodium chicken broth .
  • 1 tbsp sliced fresh thyme leaves .
  • 2 medium garlic cloves, minced .
  • 2 tbsps unsalted butter .
  • 1 c heavy cream .
  • 1 medium onion, minced .
  • 1/4 tsp ground black pepper .
  • 2 1/2 lbs russet potatoes, peeled & sliced 1/8-inch thick (about 5 medium) .
  • 1 1/4 tsps table salt

Directions
  • Step #1 Adjust oven rack to middle position; heat oven to 425F degrees.
  • Step #2 Melt butter in large Dutch oven over medium-high heat.
  • Step #3 Add onion & cook, stirring every once in awhile,about 4 mins.
  • Step #4 Add garlic, thyme, salt, & pepper; cook about 30 seconds.
  • Step #5 Add potatoes, cream, chicken broth, & bring to simmer.
  • Step #6 Cover up, reduce heat to medium-low, & let simmer until potatoes are almost tender about 10 mins.
  • Step #7 Transfer mixture to 8-inch-square baking dish sprinkle evenly with cheese.
  • Step #8 Bake until cream is bubbling around edges & top is golden brown, about 15 mins.
  • Step #9 Cool 10 mins before serving.
