1 whole turkey, any size (figure about 1 lb per person when purchasing) .
4 garlic cloves .

Directions
Step #1 Preheat oven to 425F degrees.
Step #2 Remove giblets.
Step #3 Wash turkey & pat dry.
Step #4 Take the thyme leavs off the stems & place this in bowl with olive oil.
Step #5 Add about 2 tsp salt & 2 tsp pepper.
Step #6 Mix to mix.
Step #7 Slice onon & lemon into pieces that will fit in the cavity of the bird.
Step #8 Put turkey on roasting pan.
Step #9 Take the thyme/oil mixture & rub inside the cavity of the bird.
Step #10 Place onion, lemon slices & half the garlic cloves into the cavity of the bird.
Step #11 Using your fingers, carefully separate the skin from meat around the breast area, creating a pocket.
Step #12 Rub the thyme/oil mixture in the pocket you have created between the skin & the meat.
Step #13 Insert the remaining garlic cloves (can also add some onion pieces here as well) between the skin & meat.
Step #14 Truss the bird to make sure flavors stay in the bird.
Step #15 Put turkey in oven at 425F degrees for 10 mins then reduce temperature to 350F & continue cooking until the internal temperature reaches 180F degrees.
Step #16 Before serving remove items from cavity, skin & flavorings from under the skin.
