Braised Pork With Green Chile Sauce Of Chile Verde Recipe

Ingredients
  • 1 (7 oz) can california green chilies, seeded & sliced .
  • 1/2 tsp ground cumin .
  • 1 large onion, sliced .
  • 2 garlic cloves, minced (I add more) .
  • 3 lbs lean boneless pork butt .
  • tomatoes, cut in wedges .
  • 1 tbsp wine vinegar .
  • sour cream .
  • 1 1/2 tsps salt .
  • 1/2 c fresh cilantro, sliced .
  • Garnish .
  • 1 tsp dried oregano leaves, crumbled .
  • limes, cut in wedges .
  • 1/4 c water .
  • 2 tbsps canola oil .
  • cooked rice .
  • 2 large green bell peppers, seeded & sliced

Directions
  • Step #1 Trim & discard fat & cut pork in 1-inch cubes.
  • Step #2 In a large frying pan, heat oil over mediun-high heat; add meat a few cubes at a time & cook this until very brown.
  • Step #3 Push meat to side of pan & add onion, garlic & bell peppers; saute until limp.
  • Step #4 Stir in chiles, cumin, vinegar, cilantro, salt, oregano, & water.
  • Step #5 Cover up & let simmer until meat is fork tender(about 1 hr).
  • Step #6 Skim off fat & discard.
  • Step #7 Serve with rice or make burritos or serve in your favorite way.
