Step #1 Trim & discard fat & cut pork in 1-inch cubes.
Step #2 In a large frying pan, heat oil over mediun-high heat; add meat a few cubes at a time & cook this until very brown.
Step #3 Push meat to side of pan & add onion, garlic & bell peppers; saute until limp.
Step #4 Stir in chiles, cumin, vinegar, cilantro, salt, oregano, & water.
Step #5 Cover up & let simmer until meat is fork tender(about 1 hr).
Step #6 Skim off fat & discard.
Step #7 Serve with rice or make burritos or serve in your favorite way.
