1-hour Smokey Ham And Lentil Soup Recipe

Ingredients
  • 3/4 c onions, sliced .
  • 1 tbsp worcestershire sauce .
  • 1 tsp oregano flakes .
  • 6-8 oz smoked ham, sliced .
  • 1 lb dry lentils, rinsed .
  • 1 1/2 tbsps ham soup base or 3 ham bouillon cubes .
  • 1 tbsp cider vinegar .
  • Tabasco sauce, a few drops (optional) .
  • liquid smoke, a few drops (optional) .
  • 3/4 c carrots, sliced .
  • 1 tsp salt .
  • 3/4 c celery, sliced .
  • 10 c water .
  • 1 tsp ground black pepper

Directions
  • Step #1 In a stock pot, ham, mix lentils, water & base/bouillon & bring to a boil.
  • Step #2 Reduce heat; simmer until lentils are tender, about 30 mins.
  • Step #3 Add remaining ingredients; simmer until veggies are tender, about 20 mins.
  • Step #4 If you wish to puree: remove 3 c of lentils, broth & veggies (keep sliced ham in soup pot); puree, return to soup & stir.
  • Step #5 For the crockpot: place all ingredients in a slow cooker (aka crockpot) & cook on LOW for about 10 hrs; follow step #4 prior to serving.
