Zingy Chicken Salad With Sour Cream Recipe

Ingredients
  • 1/2 c sour cream .
  • salt (to taste) .
  • 1 tsp mustard, spicy .
  • 3 c chicken breasts, cooked & sliced (poached or baked, we prefer poached because it is moister) .
  • 1 tbsp tarragon (dried, or fresh tarragon to taste) .
  • 1 1/2 c finely sliced celery .
  • 1 1/2 tbsps horseradish, prepared (zing is proportionate to horseradish, so adjust at will) .
  • 1 small onion (finely minced, we prefer a sweeter onion, like Vidalia) .
  • pepper (to taste) .
  • 1/2 c mayonnaise

Directions
  • Step #1 Mix together sour cream, mayonnaise, mustard & horseradish.
  • Step #2 Stir in chicken, onion, tarragon, celery, salt & pepper.
  • Step #3 Allow at least a few hrs "meld" time in the refrigerator.
  • Step #4 It improves the flavor dramatically.
  • Step #5 * I've counted the minimum meld time as cook time *.
  • Step #6 Serve on greens or use for sandwiches.
  • Step #7 This zingy salad stands up particularly well to strong flavored breads, like dark pumpernickel.
