Mashed Red Potatoes With Garlic Recipe

Ingredients
  • 1/4 c unsalted butter .
  • kosher salt .
  • 1 1/2 lbs small red potatoes .
  • 1 head fresh garlic .
  • 1 c milk .
  • 1 c cream, can use half & half .
  • black pepper, freshly cracked

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Cook the potatoes in salted water until tender; drain & dry them out in the oven for 10 mins.
  • Step #3 While potatoes are cooking, peel all the cloves from the head of garlic.
  • Step #4 In a small saucepan, simmer the peeled garlic cloves with the cream or half & half, the milk & the butter.
  • Step #5 When the garlic is very tender, set the mixture aside.
  • Step #6 Puree the potatoes & garlic mixture through the medium disk of a food mill.
  • Step #7 Spice up with salt & pepper.
  • Step #8 If necessary, thin with more milk.
  • Step #9 Keep warm until serving.
