Bitter Chocolate Lamb Cutlets With Suateed Spinach Recipe

Ingredients
  • 8 stalks asparagus .
  • 8 frenched lamb cutlets .
  • 1 glass red wine .
  • 50 g butter .
  • 6 garlic cloves .
  • 500 g spinach .
  • 3 sprigs rosemary .
  • 80% cocoa chocolate .
  • 1/2 lemon, juice of .
  • salt & pepper

Directions
  • Step #1 Marinate lamb cutlets in salt, pepper & extra virgin olive for 45 mins prior to cooking.
  • Step #2 Heat heavy based saucepan with butter until very hot.
  • Step #3 Add lamb cutlets & cook 45 second each side.
  • Step #4 Remove & rest in warm place.
  • Step #5 Pour excess oil out of pan & deglaze with lemon juice.
  • Step #6 Add red wine & finely sliced garlic & rosemary.
  • Step #7 Reduce for 7 mins.
  • Step #8 Sautee spinach in butter & garlic.
  • Step #9 Blanch asparagus.
  • Step #10 After the wine has reduced add finely sliced chocolate & thicken.
  • Step #11 Pour through a fine sieve to remove rosemary & garlic from sauce.
  • Step #12 Plate spinach, then asparagus on top & crown cutlets around.
  • Step #13 Drizzle sauce over cutlets.
