Scallops With Brown Butter & Baby Greens Recipe

Ingredients
  • 1 lb frozen sea scallops .
  • 1/4 c pecans, coarsely sliced .
  • 6 tbsps butter .
  • 2 tsps white wine vinegar .
  • salt & pepper .
  • 1/2 lb baby greens, wash & dried

Directions
  • Step #1 In a large skillet, cook butter over med-heat/flame until golden brown & most of the foam has subsided.
  • Step #2 Stir frequently.
  • Step #3 This will take about 4 mins.
  • Step #4 Transfer the butter to a small bowl.
  • Step #5 Stir in pecans & vinegar.
  • Step #6 Spice up with salt & pepper.
  • Step #7 Spice up scallops with salt & pepper.
  • Step #8 Heat same skillet over medium-high heat.
  • Step #9 When hot, add half of scallops & cook this until browned & opaque in the center.
  • Step #10 Flip scallops once or twice.
  • Step #11 They will cook in only a few mins.
  • Step #12 Divide baby greens among four serving plates.
  • Step #13 Top with cooked scallops.
  • Step #14 Spoon butter mixture over scallops.
