Lemon Poppy Seed Pancakes Recipe

Ingredients
  • 1/2 tsp vanilla powder or extract .
  • 1/2 c honey .
  • 1 c sour cream .
  • 1 c quick-cooking oats .
  • 1/4 c poppy seeds .
  • 3 c unbleached all-purpose flour .
  • 1 1/2 c water .
  • 1/2 tsp salt .
  • 1 1/2 c milk .
  • 1/2 c butter .
  • 5 eggs, lightly beaten .
  • 1/4 c baking powder .
  • 1 tsp lemon extract .
  • 2 lemons, zest of .
  • Honey Butter .
  • Pancakes .
  • 1 tsp baking soda

Directions
  • Step #1 For the Pancakes: Combine flour, baking powder, oats, baking soda & salt.
  • Step #2 Add eggs, milk & water; beat just until mixed, sour cream, but still lumpy.
  • Step #3 Add lemon zest, lemon oil, poppy seeds & vanilla powder or extract; mix thoroughly.
  • Step #4 Let batter stand for 30 mins (or cover & put in the fridge overnight).
  • Step #5 Add more milk or water, if needed.
  • Step #6 Spoon batter onto a hot, buttered griddle or skillet & cook pancakes until browned on both sides.
  • Step #7 Serve with honey butter.
  • Step #8 For the honey butter: Melt butter in a saucepan over low heat/flame.
  • Step #9 Slowly add honey, stirring constantly, until smooth & opaque.
  • Step #10 Remove from heat & cool slightly.
