Caramel Apple Cheesecake Recipe

Ingredients
  • 1 (12 oz) package stouffer's frozen harvest apples, thawed .
  • 1 tbsp vanilla .
  • 1/3 c sugar .
  • 4 large eggs .
  • 4 (8 oz) packages cream cheese, softened .
  • 2 c light brown sugar .
  • 1/4 c butter .
  • 2 c graham cracker crumbs .
  • 3 tbsps flour .
  • 1/2 c butter or margarine, melted

Directions
  • Step #1 Stir together first three ingredients; press mixture evenly on bottom & up sides of a 10 inch springform pan.
  • Step #2 Freeze 20 mins.
  • Step #3 Stir together apples & flour.
  • Step #4 Melt 1/4 c butter; add apple mixture & 1/2 c brown sugar.
  • Step #5 Cook, stirring constantly, 3 to 4 mins or until mixture is thickened.
  • Step #6 Remove from heat.
  • Step #7 Beat cream cheese & remaining 1 1/2 c brown sugar; add eggs, 1 at a time, beating after each addition.
  • Step #8 Add vanilla, beat until mixed.
  • Step #9 Pour half of mixture into prepared crust.
  • Step #10 Gently spoon apple mixture on top, spreading to within 1 inch of edge.
  • Step #11 Spoon remaining cream cheese mixture over apple mixture, starting at outer edge & working toward the center.
  • Step #12 Bake at 350 degrees for 1 hr.
  • Step #13 Turn oven off & let cheesecake stand in oven 30 mins.
  • Step #14 Cool on a wire rack.
  • Step #15 Chill at least 8 hrs.
  • Step #16 Garnish with toasted sliced pecans.
