Curried Cashew, Pear, And Grape Salad Recipe

Ingredients
  • 1/2 c olive oil
  • 4 slices bacon, coarsely sliced
  • 1/2 tsp cayenne pepper
  • 3/4 c cashew halves
  •  
  • 1/2 medium Bosc pear, thinly sliced
  • 1 tbsp brown sugar
  • 1 tsp sliced fresh rosemary
  • 1 tsp curry powder
  • 1 (10 oz) package mixed salad greens
  • 2 tbsps honey
  • 1 tbsp melted butter
  • 3 tbsps white wine vinegar
  • 3 tbsps Dijon mustard
  • 1/2 tsp kosher salt
  •  
  • Dressing:
  • salt & black pepper to taste
  • Salad:
  • 1/2 c halved seedless red grapes

Directions
  • Step #1 In a large, toast cashews until golden brown, dry skillet over medium-high heat, about 5 mins.
  • Step #2 Remove cashews to a dish to cool slightly.
  • Step #3 Return skillet to medium-high heat, cook bacon strips until crisp on both sides, about 7 mins.
  • Step #4 Remove bacon with a slotted spoon, & soak up grease with a paper towel.
  • Step #5 Coarsely chop bacon, & set aside.
  • Step #6 In a medium bowl, salt, rosemary, cayenne pepper, curry powder, stir this together butter, brown sugar, & toasted cashews.
  • Step #7 Set aside.
  • Step #8 In a small bowl, stir this together white wine vinegar, mustard, & honey.
  • Step #9 Slowly whisk in olive oil, & sprinkle with salt & pepper to taste.
  • Step #10 In a large salad bowl, grapes, toss dressing with greens, pear slices, & bacon, & sprinkle with nut mixture.
