Date And Walnut Loaf - Dairy Free & Fat Free Recipe

Ingredients
  • 1/2 c brown sugar .
  • 1 1/4 c plain flour .
  • 3/4 c rolled oats .
  • 2 tbsps maple syrup .
  • 1 c sliced walnuts .
  • 1 c sliced dried pitted dates .
  • sesame seeds (optional) .
  • 1 c boiling water .
  • 1 tsp bicarbonate of soda

Directions
  • Step #1 Preheat the oven to moderate (180C/160C fan forced) Grease a 14cm x 21cm loaf pan.
  • Step #2 Combine dates & maple syrup In a large-ish heatproof bowl, add the boiling water & stand for 15 mins.
  • Step #3 Add walnuts, sugar, sifted flour & soda, rolled oats, stir in theto date mixture until well mixd.
  • Step #4 Spread mixture into the prepared pan, sprinkle with sesame seeds & bake for approximately 50 mins or until cooked when tested.
  • Step #5 Stand for 5 mins before turning onto a wire rack to cool.
