Ginger Chicken & Shrimp Stir-fry With Sesame Noodles Recipe

Ingredients
  • 2 tbsps toasted sesame seeds .
  • 3 tbsps olive oil .
  • 1 bunch scallions, sliced into 2-inch pieces .
  • 6 garlic cloves, pressed .
  • 1/3 c soy sauce (original recipe calls for tamari (dark soy sauce) .
  • 3/4 lb chicken breasts, cut into strips .
  • 1 lb spaghetti .
  • 1 lb frozen cocktail shrimp, thawed & de-tailed .
  • 1/2 red bell pepper, seeded & cut into pieces .
  • 2 inches fresh ginger, peeled & grated .
  • 2 tbsps sesame oil .
  • 4-5 oz mushrooms, sliced (original recipe calls for Shiitake) .
  • 1 tsp coarse black pepper .
  • salt

Directions
  • Step #1 Cook spaghetti until al dente.
  • Step #2 Drain in colander.
  • Step #3 While noodles cook, heat olive oil over high heat until rippling In a large-ish nonstick skillet.
  • Step #4 Add chicken & stir fry till golden.
  • Step #5 Add scallions, mushrooms, red pepper, garlic & ginger & stir-fry 2 mins.
  • Step #6 Add shrimp after 1 min.
  • Step #7 Spice up with salt & pepper & keep warm.
  • Step #8 While spaghetti drains, add sesame oil & soy sauce to pasta pot.
  • Step #9 Add spaghetti & toss to coat.
  • Step #10 Either add stir-fry to noodles & toss to mix or serve stir-fry on top of noodles.
  • Step #11 Top with toasted sesame seeds.
