Pineapple-coconut Frozen Dessert Recipe

Ingredients
  • 1/2 c butter, softened .
  • 1 (14 oz) can sweetened condensed milk .
  • 1/2 c sliced pecans .
  • 1 (7 oz) can flaked coconut .
  • 1 (8 oz) can crushed pineapple, well drained .
  • 1 (16 oz) container frozen whipped topping, thawed .
  • 1/2 c powdered sugar .
  • 1 1/2 c flour .
  • 1/4 c butter .
  • 1 (8 oz) package cream cheese, softened

Directions
  • Step #1 Preheat oven to 350*.
  • Step #2 Grease 13x9x2-inch baking dish; set aside.
  • Step #3 In medium bowl mix flour, 1/2 c butter & powdered sugar.
  • Step #4 Firmly press mixture into bottom of prepared pan.
  • Step #5 Bake for 15 to 18 mins or until lightly browned around edges.
  • Step #6 Meanwhile, for filling in large saucepan melt 1/4 c butter over med-heat/flame.
  • Step #7 Stir in coconut & pecans.
  • Step #8 Cook & stir over low heat/flame until coconut is golden.
  • Step #9 Remove from heat & cool.
  • Step #10 In large mixing bowl beat sweetened condensed milk & cream cheese with electric mixer on medium speed until smooth.
  • Step #11 Fold in dessert topping.
  • Step #12 Spread one half of the cream cheese mixture over the cooled crust.
  • Step #13 Sprinkle top with one half of the coconut mixture.
  • Step #14 Spread pineapple over coconut layer.
  • Step #15 Repeat cream cheese & coconut layers.
  • Step #16 Cover up & freeze for 8 to 24 hrs or until firm.
  • Step #17 Let stand at about room temp for 10 mins before serving.
