Chimichurri (from Eating Well) Recipe

Ingredients
  • 1 small garlic clove, sliced .
  • 1/2 tsp kosher salt .
  • 4 tsps extra-virgin olive oil .
  • 1 c packed flat leaf parsley (1/2-1 bunch) .
  • 3 tbsps distilled white vinegar .
  • 1/4 tsp ground chipotle chile pepper or cayenne pepper

Directions
  • Step #1 Chop parsley & garlic together on a cutting board until the parsley is finely minced.
  • Step #2 Transfer to a medium bowl, add vinegar, oil, salt & chipotle (or cayenne) pepper.
  • Step #3 Stir to mix.
  • Step #4 (Or mix all ingredients in the food processor/blender & mix!).
