Lemon & Mixed Berry Souffle Pudding (low Cal/sugar/fat) Recipe

Ingredients
  • 1 c skim milk .
  • water, boiled .
  • 150 g mixed berries .
  • 2 tsps grated lemon rind (optional) .
  • 1/2 c self-raising flour, sifted .
  • 1 c Splenda sugar substitute .
  • 3 eggs, separated .
  • 30 g sugar-free applesauce .
  • 1/4 c lemon juice

Directions
  • Step #1 Preheat oven to 180°C Spray 4 1-c gratin dishes or 3 1-c souffle dishes with cooking spray/Pam.
  • Step #2 Using an electric mixer, beat egg-yolks & half the Splenda together until thick & creamy.
  • Step #3 Stir in skim milk, lemon juice, flour, apple sauce & (optional) rind.
  • Step #4 In another bowl, beat egg whites until soft peaks form.
  • Step #5 Gradually add other half of Splenda, continually beating until mixture is thick & glossy.
  • Step #6 Carefully fold egg-yolk lemon mixture through egg whites with a wooden spoon.
  • Step #7 Do not overmix -you want to keep this light & fluffy.
  • Step #8 Scatter mixed berries evenly between the dishes & top this with equal amounts of the prepared mixture.
  • Step #9 Place dishes In a large-ish baking pan & add enough just-boiled water to come halfway up sides of the dishes.
  • Step #10 Bake 35-40 mins or until puddings are lightly browned & firm to touch.
