Chinese Fried Rice Recipe

Ingredients
  • 2 c cooked long-grain rice .
  • 2 eggs .
  • 3 spring onions, green parts only, sliced .
  • 1 garlic, crushed .
  • 2 c prawns .
  • 1 tsp finely sliced fresh gingerroot .
  • 3 tbsps vegetable oil .
  • 4 shallots, finely sliced .
  • 2 tbsps light soy sauce .
  • salt & freshly ground black pepper .
  • 1 tbsp chinese rice wine .
  • 1 tbsp oyster sauce .
  • 1 tsp chili sauce (optional) .
  • 2 c thickly sliced roast pork .
  • 2 c frozen peas, thawed

Directions
  • Step #1 In a bowl, beat the eggs well, & season.
  • Step #2 Heat 1 tbsp oil In a large-ish non-stick frying pan, pour in the eggs & cook this until just set.
  • Step #3 Roll up the pancake, cut into thin strips & set aside until needed.
  • Step #4 Combine soy sauce, oyster sauce, chilli sauce & rice wine.
  • Step #5 Set aside.
  • Step #6 Heat the remaining oil in a wok, ginger, add the shallots or onion, garlic & prawns & cook for about 1-2 mins.
  • Step #7 Do not let the garlic burn.
  • Step #8 Add the soy sauce mixture, peas & pork, spring onions, & stir this to heat through.
  • Step #9 Add the rice & fry over moderate heat for 6-8 mins.
  • Step #10 Turn into a dish & decorate witht eh egg pancake.
  • Step #11 Spice up to taste.
  • Step #12 Serve hot.
