Ingredients
  • 1/2 c cheddar cheese, shredded .
  • 1 tbsp paprika .
  • 1 (14 oz) can sliced tomatoes .
  • 1 tbsp italian seasoning .
  • 1 (14 oz) can kidney beans .
  • 1 lb lean ground beef or ground turkey .
  • 1 small onion, sliced .
  • 3 tbsps tomato paste .
  • 2 garlic cloves, minced .
  • 12 oz whole wheat macaroni (or other small pasta like bowtie or rotini) .
  • 1 stalk celery, sliced .
  • 1/2 c frozen sweet corn

Directions
  • Step #1 Cook pasta according to directions on package, reserving a little bit of pasta water.
  • Step #2 Heat a large skillet over medium high heat, add ground beef & cook about 5 mins, until meat is not quite cooked through.
  • Step #3 Add onion & garlic, & saute about 2 mins.
  • Step #4 Add celery, corn & kidney beans, cook about 2 mins, or until corn is thawed.
  • Step #5 Stir in tomato paste, add sliced tomatoes, italian seasoning & paprika.
  • Step #6 Reduce heat to low & let simmer 5-10 mins to let flavors mix.
  • Step #7 Stir cooked macaroni & reserved pasta water into beef & tomato mixture & serve.
  • Step #8 Top with shredded cheese if desired.
