Salmon-corn Chowder Recipe

Ingredients
  • 1 tsp dill weed .
  • 2 tbsps butter .
  • 1 (7 3/4 oz) can salmon .
  • 1/2 c celery, sliced .
  • 2 c potatoes, peeled & sliced .
  • 1 tbsp all-purpose flour .
  • 1 medium onion, sliced .
  • salt & pepper .
  • 2 c water .
  • 2 vegetable bouillon cubes .
  • 1 (13 oz) can evaporated milk .
  • 1 (8 3/4 oz) can cream-style corn

Directions
  • Step #1 Drain salmon reserving liquid.
  • Step #2 Flake salmon & mash the bones.
  • Step #3 Sauté onion & celery in butter in a 4-quart saucepan until onion is tender.
  • Step #4 Stir in flour & add bouillon cubes, water & potatoes.
  • Step #5 Bring to a boil.
  • Step #6 Cover up & let simmer about 15 mins or until potatoes are tender.
  • Step #7 Add salmon, including liquid, bones & skin -- (I leave the skin out).
  • Step #8 Stir in milk, corn, dill weed; salt & pepper to taste.
  • Step #9 Heat through & serve this with a garnish of parsley if desired.
