Pumpkin Tomato Basil Soup Recipe

Ingredients
  • 8-10 carrots, peeled, sliced, sliced .
  • 1/4 c butter .
  • 1 small pumpkin .
  • 1 c mushrooms, sliced .
  • 4 c chicken broth .
  • 1 tsp salt .
  • 2 tbsps fresh basil, sliced .
  • 1 tsp sugar .
  • 2-3 garlic cloves, sliced .
  • 1 medium onion .
  • 1 pinch ground pepper .
  • 7 tomatoes, skinned & sliced .
  • 1/4 c cream

Directions
  • Step #1 In a large pot, put Chicken Stock, pumpkin & carrot.
  • Step #2 Bring to a boil, then reduce to simmer for 1/2 hr.
  • Step #3 Put butter in a frying pan & sautee onions & mushrooms until browned.
  • Step #4 Add tomatoes & continue to fry for 5 mins.
  • Step #5 Puree all ingredients in a mixer.
  • Step #6 Place pureed soup into the soup pot.
  • Step #7 Add spices, sugar & cream at this time.
  • Step #8 Simmer for 10 mins.
  • Step #9 Serve with fresh croutons.
