Brandied Raspberry Chicken Recipe

Ingredients
  • 6 boneless skinless chicken breasts .
  • 1 tbsp almonds, toasted sliced .
  • 1 1/2 c cranberry juice .
  • Sauce .
  • 1 tbsp cornstarch .
  • 2 tbsps brandy .
  • 2 tbsps olive oil .
  • 1/2 lb raspberries, frozen (thawed) or raspberries, fresh .
  • 1 tbsp maple syrup .
  • 3/4 tsp brown sugar

Directions
  • Step #1 Sauce :.
  • Step #2 Cook all ingredients but brandy & cornstarch for 1/2 hr.
  • Step #3 Strain through sieve to eliminate raspberry seeds.
  • Step #4 Pour back into sauce pan.
  • Step #5 Blend cornstarch & brandy.
  • Step #6 Add to mixture & cook this until thickened.
  • Step #7 You may add salt & pepper to taste at this point (personal preference).
  • Step #8 Turn temperature to low or if necessary cover & remove this from heat.
  • Step #9 Brown chicken on both sides & then bake 10 min in 350% oven or until juices run clear.
  • Step #10 Serve with sauce drizzled over chicken.
  • Step #11 Sprinkle top with toasted sliced almonds.
  • Step #12 **there should be enough sauce depending on how much you like on your chicken to serve up to 8, however it definitely serves 6.
  • Step #13 ***I like to serve this with rice & place the extra sauce in a serving dish to pass around if anyone wants to put it on their rice.
  • Step #14 If doing this I would suggest you make it with 6 chicken breasts not 8.
