Stir Fried Chicken With Red Peppers And Snow Peas Recipe

Ingredients
  • 1 lb boneless skinless chicken breasts, cut for stir-fry .
  • 2 tbsps cornstarch .
  • 1 c reduced-sodium fat-free chicken broth .
  • 8 oz stringed snow peas .
  • 1 c red peppers, slice .
  • 3 tbsps light soy sauce .
  • 1 tsp canola oil .
  • 2 garlic cloves .
  • 1/4 c scallions, sliced

Directions
  • Step #1 Mince the garlic.
  • Step #2 In a medium bowl, 1 tbsp of the cornstarch, mix 2 tbsps of the soy sauce, & the garlic & stir this to mix.
  • Step #3 Add the chicken strips & toss to coat.
  • Step #4 Put the remaining 1 tbsp cornstarch in a small bowl & whisk in the remaining 1 tbsp soy sauce & chicken broth.
  • Step #5 In a large nonstick skillet, heat the canola oil over medium-high heat until hot.
  • Step #6 Add the chicken & stir-fry until no longer pink, 4 to 5 mins.
  • Step #7 Add the pepper slices, & scallions, snow peas, & stir-fry for 2 mins.
  • Step #8 Stir the broth mixture, & cook, until the sauce is thickened, add it to the skillet, stirring, 1 to 2 mins.
