Microwave Vegetarian Meatloaf Recipe

Ingredients
  • 2 eggs, slightly beaten .
  • 1 tbsp yellow mustard .
  • 1 green pepper, sliced .
  • 1 tsp kosher salt .
  • 1/4 tsp pepper .
  • 1 medium onion, sliced .
  • 1/4 tsp McCormick's Montreal Brand steak seasoning .
  • 1 (8 oz) can tomato sauce .
  • 1/4 tsp garlic powder .
  • 2 garlic cloves, minced .
  • 1/3 c milk .
  • 1 tbsp canola oil .
  • 1 tbsp honey .
  • 6 oz baby portabella mushrooms, sliced .
  • 2/3 c brown rice, cooked .
  • 1 tbsp brown sugar .
  • 1 (12 oz) package veggie crumbles, thawed .
  • 1/3 c breadcrumbs

Directions
  • Step #1 Saute the mushrooms, pepper, onion & garlic in the canola oil until all are soft.
  • Step #2 Set aside to cool slightly.
  • Step #3 Combine tomato sauce, honey, brown sugar & mustard.
  • Step #4 Set aside.
  • Step #5 In a large bowl, mix the eggs & milk.
  • Step #6 Add the breadcrumbs, the mixture should look like a thick paste.
  • Step #7 To the paste, rice, steak seasoning mix, sauteed vegetable mixture, salt, pepper, add the veggie crumbles, & half the sauce mixture.
  • Step #8 Combine well.
  • Step #9 Spread the mixture in a greased, 8 inch square glass baking dish.
  • Step #10 Pour the remaining sauce mixture on top & spread evenly.
  • Step #11 Microwave the meatloaf on high for 14 mins, checking after about 10 to compensate for different ovens.
  • Step #12 The edges should be somewhat brown & firm with most of the sauce on top looking thick & a bit dry.
  • Step #13 Allow to cool for 5-10 mins.
