Garlic Lemon Chicken Breasts Recipe

Ingredients
  • 1/4 c flat leaf parsley, sliced .
  • 2 tbsps butter .
  • 1 small head of garlic, peeled & sliced thinly .
  • salt & pepper, to taste .
  • 1/4 c lemon juice, freshly squeezed .
  • 4 chicken breast halves (boned or not but with skin)

Directions
  • Step #1 In a small bowl mix the garlic & parsley.
  • Step #2 Spice up with salt & pepper (I like a lot of pepper) to taste.
  • Step #3 Reserve half of the mixture for the sauce.
  • Step #4 Gently lift the skin of each chicken breast half to form a small pocket.
  • Step #5 Stuff each pocket with a quarter of the remaining garlic mixture.
  • Step #6 Grill or broil chicken breasts 8-10 mins on each side until springy to the touch.
  • Step #7 Do not overcook.
  • Step #8 Heat the butter in a small skillet & add the remaining garlic mixture.
  • Step #9 Saute for a few seconds, add lemon juice, & heat through.
  • Step #10 Spoon sauce over chicken breasts to serve.
