Baby Bok Choy Salad Recipe

Ingredients
  • 2-3 heads baby bok choy .
  • 1/4 c sesame seeds .
  • 1/4 c balsamic vinegar .
  • 1 tbsp soy sauce .
  • 1/2 c raw sugar .
  • 1/4 c blanched slivered almonds .
  • 1/2 c olive oil .
  • 3 green onions .
  • 1/4 c red wine vinegar .
  • 2 (3 oz) packages ramen noodles

Directions
  • Step #1 In a small bowl, oil, whisk together vinegars, soy sauce, & sugar.
  • Step #2 Set aside.
  • Step #3 Melt the butter over med.
  • Step #4 heat in a small skillet.
  • Step #5 Crush the ramen noodles while still in packaging, & add to the butter along with the almonds & sesame seeds.
  • Step #6 Saute until everything is golden brown.
  • Step #7 Remove from heat.
  • Step #8 Chop bok choy & green onions & add to a large bowl.
  • Step #9 Just before serving, sprinkle with the noodle mixture & dressing, & toss to coat.
