Ingredients
Garnish .
3 tbsps fresh lemon juice .
3/4 c onions, sliced .
fresh parsley or oregano, sliced .
1/2 tsp oregano, dried .
1 1/2 tbsps olive oil .
1 c plum tomatoes, sliced & seeded .
1 c oyster mushrooms, sliced .
2 tsps vegetable oil .
1 lb squid, cleaned .
1 tsp garlic, minced .
3 tbsps black olives, sliced
Directions
Step #1 Cut squid bodies crosswise into rings 1/2 inch thick.
Step #2 Divide tentacles in half if large.
Step #3 In a skillet sprayed with Pam, heat 1 tsp oil over medium-high heat; cook mushrooms & onions for 5 mins, or until softened.
Step #4 Stir in tomatoes, olives, & oregano; cook for 1 min longer.
Step #5 Remove from heat.
Step #6 Stir in lemon juice, olive oil, & garlic.
Step #7 In another skillet sprayed with Pam, heat remaining 1 tsp oil over high heat; cook squid for 2 mins, or until cooked through but still tender.
Step #8 Transfer to a serving dish.
Step #9 Pour tomato–olive mixture on top of squid.
Step #10 Garnish with fresh parsley.
