Mediterranean Squid With Mushrooms And Tomatoes Recipe

Ingredients
  • Garnish .
  • 3 tbsps fresh lemon juice .
  • 3/4 c onions, sliced .
  • fresh parsley or oregano, sliced .
  • 1/2 tsp oregano, dried .
  • 1 1/2 tbsps olive oil .
  • 1 c plum tomatoes, sliced & seeded .
  • 1 c oyster mushrooms, sliced .
  • 2 tsps vegetable oil .
  • 1 lb squid, cleaned .
  • 1 tsp garlic, minced .
  • 3 tbsps black olives, sliced

Directions
  • Step #1 Cut squid bodies crosswise into rings 1/2 inch thick.
  • Step #2 Divide tentacles in half if large.
  • Step #3 In a skillet sprayed with Pam, heat 1 tsp oil over medium-high heat; cook mushrooms & onions for 5 mins, or until softened.
  • Step #4 Stir in tomatoes, olives, & oregano; cook for 1 min longer.
  • Step #5 Remove from heat.
  • Step #6 Stir in lemon juice, olive oil, & garlic.
  • Step #7 In another skillet sprayed with Pam, heat remaining 1 tsp oil over high heat; cook squid for 2 mins, or until cooked through but still tender.
  • Step #8 Transfer to a serving dish.
  • Step #9 Pour tomato–olive mixture on top of squid.
  • Step #10 Garnish with fresh parsley.
