Low Fat Sweet Potato Latkes Recipe

Ingredients
  • 1 3/4 lbs sweet potatoes or yams, peeled .
  • 1 onion .
  • canola oil (for frying) .
  • 1/3 c flour .
  • 5 egg whites, lightly beaten

Directions
  • Step #1 Loosely grate potatoes & onion in food processor/blender & place this in large mixing bowl.
  • Step #2 Mix in eggs.
  • Step #3 Add flour & mix well.
  • Step #4 In large non-stick skillet, heat 2 tbsp oil.
  • Step #5 Spoon out the batter into pan, being careful not to crowd--press into compact 3 inch pancakes.
  • Step #6 Cook 1 1/2 mins per side.
  • Step #7 Keep finished pancakes warm in oven until all pancakes are fried, & add as little oil to pan as needed to keep pancakes from sticking.
  • Step #8 Bake pancakes at 450 degrees for 10 mins, until golden brown.
  • Step #9 Turn over & bake 5 extra mins.
  • Step #10 Serve while hot.
