Chicken, Biscuits 'n' Gravy Casserole From Rachael Ray Recipe

Ingredients
  • 2 c baking mix (such as Bisquick) .
  • 8 oz white mushrooms, thinly sliced .
  • 7 tbsps unsalted butter, plus more .
  • 1 tsp fresh lemon juice .
  • salt & freshly ground black pepper .
  • 1 medium rotisserie-cooked chicken .
  • 3 garlic cloves, finely sliced .
  • 2 celery ribs, sliced .
  • unsalted butter, for greasing the dish .
  • 1 c milk .
  • 1 c chicken broth .
  • 1 medium onion, sliced .
  • 2 tbsps all-purpose flour

Directions
  • Step #1 Preheat the oven to 425°.
  • Step #2 Butter a large casserole dish.
  • Step #3 Pull the meat off the chicken, shredding it with your fingers or a fork into the baking dish.
  • Step #4 In a large skillet, melt 3 tbsps of the butter over high heat.
  • Step #5 Add the mushrooms, until the mushrooms are browned, onion & celery & cook, stirring every once in awhile, about 6 mins.
  • Step #6 Lower the heat to medium, sprinkle the flour into the skillet & cook, stirring, for 1 min.
  • Step #7 Stir in the chicken broth, stirring, bring to a simmer & cook, until thickened, about 2 mins.
  • Step #8 Stir in 1/3 c of the milk & let simmer for 1 min more.
  • Step #9 Remove the skillet from the heat, add the lemon juice, & add salt & pepper to taste.
  • Step #10 Pour the gravy over the chicken in the baking dish.
  • Step #11 Melt the remaining 4 tbsps of butter with the garlic.
  • Step #12 Stir together the baking mix, the remaining 2/3 c of milk & the cheese.
  • Step #13 Drop tbspfuls of the biscuit mixture on top of the casserole & brush with half of the garlic butter.
  • Step #14 Bake until the biscuits are golden brown, about 25 mins, brushing them once or twice with the remaining garlic butter.
