Buttermilk Chocolate Cupcakes Recipe

Ingredients
  • 1 c cornstarch .
  • 1 c rice flour .
  • 2 large eggs .
  • 1/2 c cocoa .
  • 2/3 c buttermilk .
  • 1 tsp xanthan gum .
  • 1 tbsp stevia, liquid .
  • 1/2 c margarine, softened .
  • 1/2 tsp salt .
  • 1 tsp baking soda

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Line the c of 18 muffin c with paper liners & set aside.
  • Step #3 In medium bowl, cream butter & sugar together with an electric mixer till light & fluffy, then add the eggs one at a time, beating after each addition till well mixed.
  • Step #4 In a small mixing bowl, mix the flour, salt, & baking soda & mix well.
  • Step #5 Add alternately with the buttermilk to the creamed mixture, ending with the flour mixture & beating till well mixed.
  • Step #6 I usually use reconstituted buttermilk powder in my cooking.
  • Step #7 (4 tbsp buttermilk powder & 1 c water = 1 c buttermilk).
  • Step #8 Fill the c of each c till half full & bake for 20 to 25 mins or until done.
  • Step #9 Let the ccakes cool in pan for 10 mins, then transfer to a wire rack to cool completely.
