Step #2 Line the c of 18 muffin c with paper liners & set aside.
Step #3 In medium bowl, cream butter & sugar together with an electric mixer till light & fluffy, then add the eggs one at a time, beating after each addition till well mixed.
Step #4 In a small mixing bowl, mix the flour, salt, & baking soda & mix well.
Step #5 Add alternately with the buttermilk to the creamed mixture, ending with the flour mixture & beating till well mixed.
Step #6 I usually use reconstituted buttermilk powder in my cooking.
Step #7 (4 tbsp buttermilk powder & 1 c water = 1 c buttermilk).
Step #8 Fill the c of each c till half full & bake for 20 to 25 mins or until done.
Step #9 Let the ccakes cool in pan for 10 mins, then transfer to a wire rack to cool completely.
