Spicy Blueberry Ice Cream Recipe

Ingredients
  • 300F ml whipping cream .
  • 150 g blueberries .
  • 1/2 c caster sugar .
  • 2 limes .
  • 200 ml coconut cream

Directions
  • Step #1 Finely grate the zest from one of the limes & juice both.
  • Step #2 Heat zest, half of the juice, & the sugar over low heat/flame & dissolve.
  • Step #3 Add blueberries & let simmer until the berries start to pop their skins (don't overcook!).
  • Step #4 Allow to cool for about five mins & stir in the coconut cream.
  • Step #5 Allow to cool to about room temp.
  • Step #6 Lightly whip cream.
  • Step #7 Fold in blueberry mixture.
  • Step #8 Add the rest of the lime juice while tasting for balance -- don't put in too much or it will easily overpower the berry taste.
  • Step #9 Put in a container & freeze for about an hr or until the mixture is set a few centimeters from the edges.
  • Step #10 Whisk until smooth & freeze for another hr; whisk again.
  • Step #11 Freeze until firm.
