Ingredients
1/3 c whipping cream .
1 1/2 c creme fraiche (I used sour cream) .
1 1/2 tsps dried thyme .
3/4 tsp fresh ground black pepper .
1 1/2 tsps kosher salt .
3 lbs yukon gold potatoes, peeled, cut into 1/8-inch slices
Directions
Step #1 Place rack in center of oven & preheat to 400F degrees.
Step #2 Generously butter 13x9" glass or ceraminc baking dish.
Step #3 Whisk creme fraiche & whipping cream in medium bowl to mix.
Step #4 Arrange 1/3 of potato slices in bottom of prepared baking dish, overlapping slightly.
Step #5 Sprinkle top with 1/2 tsp salt, 1/4 tsp pepper & 1/2 tsp thyme.
Step #6 Drop 1/3 of cream fraiche mixture in dollops over potatoes, then spread evenly over (layer will be very thin).
Step #7 Repeat layering 2 more times.
Step #8 Bake gratin 30 mins.
Step #9 Reduce oven temperature to 350 degrees & continue to bake this until potatoes are tender & top is golden brown, about 25 mins more.
Step #10 Let gratin rest 20 mins before serving.
Step #11 Can be made up to 2 hrs ahead.
Step #12 Cover up loosely with foil wrap.
Step #13 Let stand at room.
Step #14 Before serving, rewarm in 350 degree oven until heated through, about 15 mins.
