Lemon Poppy Seed Bread Recipe

Ingredients
  • 1/2 tsp almond extract .
  • 1/2 c confectioners' sugar .
  • 1/4 c lemon juice, plus .
  • 2 c flour .
  • 2 large eggs .
  • 3 tbsps corn oil .
  • 2/3 c sugar .
  • 3/4 c pineapple juice .
  • 1 1/2 tbsps lemon zest .
  • 1 tbsp lemon juice .
  • 2 tsps poppy seeds

Directions
  • Step #1 Pre heat oven 350.
  • Step #2 Spray 9x5x3" loaf pan with butter falvored spray (Pam).
  • Step #3 Stir together zest, lemon juice.
  • Step #4 Measure out 1 Tbsp put in a small bowl cover & put in the fridge for icing.
  • Step #5 Set aside remaining mixture.
  • Step #6 Stir together in another bowl flour, sugar, & poppy seeds.
  • Step #7 Make a well in the center.
  • Step #8 Mix the pineapple juice, oil, almond extract, egg, into the lemon juice mixture.
  • Step #9 Mix well.
  • Step #10 Pour into the flour well.
  • Step #11 Stir until just mixd.
  • Step #12 DO NOT OVER MIX! IT'S SUPPOSED TO BE SLIGHTLY LUMPY! Bake 40- 50 mins or until cake tester or tooth pick comes out clean.
  • Step #13 Remove from pan.
  • Step #14 Cool on rack for at least 20 mins before glazing.
  • Step #15 To make glaze whisk lemon juice mixture with 1/2 c of confectioners sugar.
  • Step #16 Whisk until smooth.
  • Step #17 Drizzle over loaf.
