Harvest Butternut Squash Soup Recipe

Ingredients
  • 1/2 c milk .
  • 1 medium onion, sliced .
  • 3 tbsps butter .
  • 1/4 tsp nutmeg .
  • 2 c water .
  • 1/4 tsp garlic powder .
  • salt & pepper .
  • 1 medium butternut squash .
  • 3 c chicken broth

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Cut squash in half lengthwise & scoop out seeds & pulp.
  • Step #3 Pour 2 c water into baking dish, & place squash halves into water, cut side down.
  • Step #4 Bake for 1 hr or until tender.
  • Step #5 Set aside to cool.
  • Step #6 When squash is cool, cook sliced onions in butter over med-heat/flame in large saucepan until onions are softened.
  • Step #7 Add chicken broth & let simmer for 10 mins.
  • Step #8 Scoop out squash flesh from the skin, & add to onion/broth mixture.
  • Step #9 Puree in batches in food processor/blender or mixer till smooth.
  • Step #10 Return soup to saucepan; cook over med-heat/flame until hot.
  • Step #11 Add milk, salt & pepper to taste.
