Don Fernando's Green Chile Stew Recipe

Ingredients
  • 1/2 lb ground chuck .
  • 1 1/2 tbsps flour .
  • 1 1/2 tsps oregano .
  • 2 tbsps butter .
  • 2 1/2 tsps cumin .
  • 2 lbs poblano peppers, roasted, peeled, & sliced .
  • 1 tomato, sliced .
  • 1/8 c fresh parsley, sliced .
  • 1 tsp black pepper .
  • 1 1/2 tbsps flour .
  • 2 1/2 tsps Tabasco sauce .
  • 1 medium onion, sliced .
  • 1/2 lb boneless sirloin, cubed .
  • 1/2 lb ground pork .
  • 1/2 c fresh cilantro, sliced .
  • 4 c chicken broth .
  • 2 tbsps butter .
  • 1 garlic clove, minced .
  • 1/2 c mexican beer (not dark) .
  • 1 tsp salt

Directions
  • Step #1 In a medium skillet cook the ground chuck, ground pork, & cubed sirloin until it is done.
  • Step #2 Remove meat with a slotted spoon & place this in a heavy, large soup pot.
  • Step #3 Add the chicken broth, poblano peppers, beer, & tomato.
  • Step #4 Bring to a boil, lower heat & reduce to a simmer.
  • Step #5 In another skillet add 2 tbsps butter & heat over med-heat/flame till melted.
  • Step #6 Add the onions, garlic & cilantro.
  • Step #7 Saute for 3 to 5 mins or until onions are softened.
  • Step #8 Add the tobasco, parsley, cumin, salt, oregano, pepper & the first 1-1/2 tbsps of flour.
  • Step #9 Stir constantly & cook for 3 mins.
  • Step #10 Add this mixture to the soup pot & mix well.
  • Step #11 Bring the soup to a boil again & then reduce the heat to low.
  • Step #12 Simmer the soup for 2 hrs stirring every once in awhile.
  • Step #13 In a small bowl place the other 2 tbsps of butter & the other 1-1/2 tbsps of flour & knead them together.
  • Step #14 While stirring constantly, add tiny bits of the butter & flour mixture to the soup.
  • Step #15 Simmer the soup for 15 mins more.
