Lavender Pound Cake Recipe

Ingredients
  • 4 eggs .
  • 1/4 c milk .
  • 1 tbsp dried lavender .
  • 1 c sour cream .
  • 1/2 tsp salt .
  • 2 tsps vanilla extract .
  • 1/4 c water .
  • 3/4 c confectioners' sugar .
  • 1 c unsalted butter, softened .
  • 1 tbsp dried lavender .
  • 2 1/2 c all-purpose flour .
  • 1/2 tsp baking soda .
  • DRIZZLE .
  • 2 c sugar

Directions
  • Step #1 Heat oven to 350°F Grease & flour two 8 1/2 x 4 1/2 x 2 5/8 - inch loaf pans.
  • Step #2 Mix flour, baking soda & salt in medium-size bowl.
  • Step #3 Pulse 1/2 c sugar with the lavender in a food processor/blender until lavender is ground.
  • Step #4 In large bowl, remaining 1 1/2 c sugar & vanilla until fluffy, lavender-flavoured sugar, beat butter, 3 mins.
  • Step #5 Beat in eggs, one at the time.
  • Step #6 In a small bowl mix sour cream & milk.
  • Step #7 On a lowish speed, beat in flour mixture with sour cream mixture, alternately, beginning & ending with the flour.
  • Step #8 Divide between pans.
  • Step #9 Bake at 350 F for 55 mins or until tester comes out clean.
  • Step #10 Cool on rack 10 mins.
  • Step #11 Remouve cakes from pans & let cool completely.
  • Step #12 DRIZZLE:.
  • Step #13 Microwave water & lavender for 30 seconds on HIGH power.
  • Step #14 Let stip for 5 mins.
  • Step #15 Strain out lavender flowers & discard.
  • Step #16 Once cake is cool, whisk lavender water & the confectioner sugar.
  • Step #17 Drizzle over both loaves.
  • Step #18 Slice & serve.
