Jamaican Jerk Chicken Recipe

Ingredients

1/2 c soy sauce (Kikkoman) .
1 tsp salt .
1 tbsp fresh coarse ground black pepper .
2 scotch bonnet peppers, sliced .
1 tbsp Chinese five spice powder .
3 scallions, sliced .
2 garlic cloves, sliced .
1 tbsp allspice berries, coarsely ground .
1 medium onion, coarsely sliced .
1 tbsp vegetable oil .
1 tsp freshly grated nutmeg .
1 tsp dried thyme .
7 lbs chickens, quartered

Directions

Step #1 In a food processor/blender, mix the first 10 ingredients & process to a coarse paste.
Step #2 With the machine on, add soy sauce & oil in a steady stream.
Step #3 pour this into a bowl, marinate chicken overnight.
Step #4 Let chicken come to about room temp before grilling.
Step #5 Grill for 35 - 40 mins.
