Creamy Artichoke Pasta Recipe

Ingredients
  • 12 oz uncooked spaghetti
  • 1/8 tsp ground cayenne pepper
  • 1 (6 oz) can marinated artichoke hearts
  • 1/4 tsp ground black pepper
  • 1/2 c grated Parmesan cheese
  • 3 cloves garlic, sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 c low-fat cottage cheese
  • 1 small onion
  • 1/2 c low-fat sour cream
  • 1 tbsp butter
  • 1 tsp dried oregano

Directions
  • Step #1 Bring a large pot of salted water to a boil.
  • Step #2 Add spaghetti & cook this until al dente.
  • Step #3 Drain & keep warm.
  • Step #4 While pasta is cooking, heat a large skillet over medium-high heat.
  • Step #5 Place olive oil, butter, & liquid from artichoke hearts in skillet.
  • Step #6 Cut artichoke hearts into bite-size pieces.
  • Step #7 When olive oil mixture is hot, add onion & garlic.
  • Step #8 Saute until soft & lightly browned.
  • Step #9 Stir in artichoke hearts & saute until heated through.
  • Step #10 Spice up with salt, cayenne pepper, black pepper, & oregano.
  • Step #11 Remove from heat & stir in the cottage cheese & sour cream.
  • Step #12 Toss mixture with cooked pasta & top this with Parmesan cheese.
